INGREDIENTS
3 chicken breasts – filleted and pounded flat, or 6 chicken cutlets
1 cup (135g) flour for dredging only
1/4 cup (60ml) olive oil
1-2 tablespoons (14-28g) unsalted butter – for searing chicken
8 cloves garlic – sliced
1 1/2 cups (360ml) low-sodium chicken stock
1 cup (240ml) dry white wine
2 tablespoons (30ml) lemon juice
6 large red roasted peppers – or enough to cover chicken in 1 layer
10 slices mozzarella cheese – or enough to cover each piece of chicken
salt and pepper – to taste
3 tablespoons (42g) cold unsalted butter – cubed
1/4 cup minced flat-leaf Italian parsley

I wanted to create this video to demonstrate how one ingredient can change everything. I mentioned at the end that you can sub in broccoli rabe, broccolini, or even mushrooms before layering the cheese and you will get a completely diiferent dish. Sliced cherry peppers would be great too. The point is to use your imagination and make recipes your own. Thanks for watching!

There is a brazilian dish just like this but it adds a layer of ham under the cheese!
I am buying the ingredients to make that beautiful dish! …Your jarred roasted red peppers are in water or oil? …And, in your opinion, what does parsley do for this (or any) dish? .. I have only bought dried parsley in a jar for my chicken noodle soup… because the dried parsley makes my chicken soup "look" better… hahaha… thanks!

Ok, if you COMBINE the Pepper + Prosciutto + Cheese… which goes on top? I'd go pepper, cheese, then prosciutto on top. Any takers?! plus balsamic reduction and basil on top…
