TRADER JOE’S FALL RECIPES PART 1!
This one uses the brand new GOAT Cheese & Caramelized Onion Ravioli from Trader Joe’s! I made it in a white wine mushroom & shallot sauce. This can be made without mushrooms (just skip them) and with all chicken broth instead of wine.
Here’s the recipe ⬇️
1 pack Goat Cheese & Caramelized Onion Ravioli
8 oz sliced baby bella mushrooms
1/2 shallot, minced
2 garlic cloves, minced
2 tbsp fresh thyme
3 tbsp butter
1/2 cup dry white wine (Sauvignon blanc, Pinot Grigio)
1/2 cup chicken broth
1/2 cup half and half (or heavy cream)
1/4 cup Parmesan cheese
Salt & pepper to taste
Start boiling water for ravioli.
Melt 2 tbsp butter in a pan on medium heat, add mushrooms, and cook until browned (about 7 min)
Add 1 more tbsp of butter, add in shallot and garlic and cook for 2 minutes.
Add wine, broth and thyme, season with salt and pepper, simmer and let liquid reduce by half.
While sauce is reducing, cook ravioli.
Once reduced, turn heat to low, add half & half, stir then add Parmesan and stir. Mix ravioli and sauce and you’re all set!
