One of the recipe requests we receive the most is for a Sicilian dish called “Pasta Con Le Sarde,” or “Pasta with Sardines.” If you’re anything like me, you might be wondering why people seem to be obsessed with learning how to make a sardine pasta. But clearly there’s something to this dish, judging from its popularity!
I’ve never tried pasta con le sarde before (for a good reason, which we’ll explain), so we figured it was time for Eva to introduce it to me and to examine why it’s so popular (and why a ton of people will never be able to make it at home).

This interesting video shows that from 1000 AC to 1240 AC the city with biggest population in Italy was Palermo. Yeah the canned fish suck.
Use a bait fish, like ballyhoo, if you near the Atlantic Ocean, to replace fresh sardines
Small finger mullet are little stronger but also easily available
Canned have too much salt for preservation.

Italian food is the most overrated food in the world.
I became curious as usual, the angler I am, and after a little research, it turns out that sardines and herring are related to each other and share some of the same distribution area, but herring is also found off the coast of North America. They are very similar in meat, so I think it should be possible to use herring as a substitute, but herring can be oily in taste, but I don't know what sardines are like, as I have never eaten a sardine. I live in Sweden and herring is very common here. I will see if I can find sardines somewhere in Sweden and make this pasta with both sardines and herring to see how big a difference there is in taste.
