I also used to think Japanese couldn't make great pizza because they don't have a bread tradition, a cheese tradition or a tomato tradition. But then I realized… Japanese are perfectionists, so yea, if they want to, they can by sheer determination, practice and focus.
Place looks great, Owner seems like a great guy and if you have multiple people staying 10 years to work for you that says a lot. Glad it stuck with it and it worked out!
