Let’s make Al Capone’s favorite pasta dish: Walnut Pasta.

Ingredients:
– Spaghetti
– Walnuts
– Garlic
– Fresh Parsley
– Parmesan Reggiano
– Olive Oil
– Salt

Step 1: Sauté the Walnuts & Aromatics
Heat some good olive oil in a pan over super low heat. Chop the walnuts and fresh parsley, and mince the garlic before adding to the pan.

Toss so everything is well-coated in the olive oil and cook until fragrant. Set aside while we focus on the pasta.

Step 2: Cook the Spaghetti
Heat a pan of heavily salted water until it comes to a rolling boil. Add the spaghetti and cook until al dente.

Reserve some of that salted, starchy pasta water for the sauce.

Step 3: Mix the Pasta
Add that reserved pasta water to your walnut mixture and bring to a simmer until it starts to thicken.

Add your al dente spaghetti and toss until the noodles are well coated in the sauce. Fold in grated Parmesan Reggiano and add a final drizzle of olive oil before serving.

I might not be a fan of Al Capone’s actions, but even I had to admit that the guy knew how to eat.

Save this recipe for the nights you want an easy, delicious comfort meal.
