  1. Italian dishes as so simple already, there is no need to do levels. You need eggs, pecorino romano, black pepper, guanciale and spaghetti. If you don't have these ingredients, it's fine, you can make yourself whatever pasta dish you want. Just don't call it a carbonara. You use bacon? Sure, but it's not carbonara. You use cream? Sure, it's not carbonara. The recipe is very simple and has 5 fucking ingredients. If you don't have those 5 specific ingredients, you are not making that dish. You can still make something very tasty using similar ingredients and similar technique. But it's not the same dish. If you make a cocktail and swap the white rum for vodka because that's what you have, are you making the same cocktail? Of course not. So if it's not the same, don't call it the same.

  2. i feel like carbonara doesn't need cream. not from a purist standpoint, it's just unnecessary. the cheese + eggs + pasta water already make it creamy.

  3. So , really good pasta 3 or 4 bucks , a piece of guancialle, 6 to 8 bucks , pecorino 6 or 7 quid ,a pack of decent eggs , 3 or 4 bucks , salt and pepper – 4 good portions ,and plenty leftovers
