Dinner from Dollar Tree tonight – and this one comes from a dietician! @nutritionbykylie shared a balanced Dollar Tree dinner idea, and I had to try it.

Here’s what I grabbed:
Rotini pasta – $1.25
Pesto – $1.25
Roasted red peppers – $1.25
Chickpeas – $1.25
Canned corn – $1.25
Garlic – $1.25 (but the peppers actually came with garlic inside, so this wasn’t needed)
Parmesan cheese – $1.25

Total: $8 (or $6.75 without the garlic)

Instructions:
Boil half the box of pasta in salted water. While that cooks, mince the garlic and sauté with chickpeas, corn, and chopped roasted red peppers. Season with salt and pepper. Add cooked pasta, half the jar of pesto, and a splash of pasta water to create a sauce. Toss well and top with Parmesan before serving.

This was so good, and the pesto is honestly worth picking up next time you’re at Dollar Tree!

  2. For me these ingredients are pretty exotic, but it looks like something I would like to try.
    But I think I would want to add some kind of meat to it to make it feel like a full meal and not a side dish?

    What would be a healthy type of meat to add that wouldn't completely throw out the concept of it being nutritionally sound?
    Maybe chunked chicken breast from our new trusty weekly rotisserie staple?

    Also feel like I would want a side of garlic toast (or pesto toast?) or something, this by itself seems like a very light side or luncheon snack that might need a little fleshing out.

    Particularly for those that aren't able to eat or prepare three balanced meals a day.

    But again, I don't want to add something that throws off the whole point of this being a nutritionally sound meal.

  5. I have been making different variations of this dish after watching both yours and Kylie’s video. It is very good and the textures go well together. I was a little bougie and swapped out corn for salmon burger chunks one night. It was so good. I hope you and Kylie do a collab soon on some videos and maybe even make a cookbook together. That would be awesome.

  8. You should try boxed Macaroni + cheese with shredded rotisserie chicken and gochujang 😬 Gochujang can be harder to find, but it’s a cheap recipe and tastes so good. Add butter and/or honey to taste

  9. Ma'am. Pesto is already cheap, nutritious food. 🤌🏻
    Basil leaves, lemon juice, garlic, pine nuts, olive oil. Toss it in cooked pasta. No pasta water required. The pecorino romano is optional if you cannot eat dairy. Grow your own basil plants and it will be even cheaper.
    Immitation parmigiano has no place in pesto.
    You do not need a nutritionist to revamp an already healthy traditional recipe. 🤌🏻😒

  10. While this looks interesting, im not sure if ur aware of whats happening in dollar tree stores across the country right now. Alot of the things u post are not available in ALOT of stores nationwide. And the stores where im from have raised their prices. Like the stuff theyre selling isnt worth it. Ive quit shopping there and most of my friends have too. You can seriously get better deals at walmart rather than going there and spending 1.25 OR MORE on canned and dry goods. I mean no disrespect. Im just saying its not worth it to shop at dollar tree anymore. 😊

  12. This looks great! Im totally gonna try this! My husband doesnt care for plain noodles and marinara sauce. (I grew up on that so I was ok with that meal but he grew up having more money than my family ❤) so this recipe will be interesting to make and see if he likes it..😊

  13. I made this tonight. It is insanely good! I do not care for firm (hard) chicken peas and found you can soak them with or without baking soda. One poster recommended that Goya brand is actually softer and that is what my dollar tree had! However, they did not have the peppers so I paid $2.59 for a small jar from Piggly Wiggly, no bonus garlic. Next time I see them at DT, I am going to pick up a few. They really add a lot to the meal. Thank you for a great recipe.
