Today I will be making delightful soup Creamed Cauliflower soup garnished with Bacon Gremolata.! We’re heading into the heart of hot soup season, and this cream of cauliflower will ward off autumn’s chill with the best of them.

Creamed Cauliflower Soup with Bacon Gremolata
Ingredients
For Creamed Cauliflower Soup
Ingredients for about 8 servings:
1 onion, chopped
1 rib celery, chopped
1 tbsp olive oil
3 cloves garlic
salt to taste
1 large russet potato, peeled, quartered
2 heads cauliflower, trimmed
1 quart chicken broth
1 quart water
1/2 cup cream
cayenne to taste
For the Bacon Gremolata
4 strips bacon
1 1/2 cups fresh breadcrumbs
1 tbsp lemon zest
2 tbsp chopped Italian parsley
DIRECTIONS
chop onions and celery set aside
peel and quarter potato
trim cauliflower and separate flourets
add olive oil to large soup pot and preheat on medium high
add celery and onion to pot and saute till softened
add quartered potato and cauliflower
add stock and or water
bring to a boil then reduce to a simmer
simmer for 30 minutes or until potatoes are fork tender
remove soup from hear and add cream
with stick blender or regular blender, blend to puree
add salt to taste
chop bacon and in separate pan render till crispy
remove and set aside, leave bacon grease in pan we will use the bacon grease to make the breadcrumbs
tear out the center of an italian loaf and break into small pieces for bread crumbs
add to bacon grease and saute till crispy
move to a bowl
add rendered bacon, minced parsley, lemon zest and hand mix
ladle soup into bowl and garnish with gremolata
Serve
