• 150 g (2/3 cup) cream cheese

• ½ cup (about 15 g) fresh baby spinach, chopped
• 1 jalapeño, finely chopped (adjust to taste)
• 1 tsp olive oil
• 1 lemon, thinly sliced
• Salt and black pepper, to taste
Instructions:
1) Prep the salmon: Carefully slice a pocket into the
side of each salmon fillet.
2) Make the filling: In a bowl, mix cream cheese, green
onion, garlic, dill, spinach, and jalapeño. Season with
salt and pepper. Stir until creamy and well combined.
3) Stuff the salmon: Evenly fill the salmon pockets with
the creamy mixture. Drizzle with olive oil, sprinkle with
salt and pepper, and top with lemon slices for a fresh
zing.
4) Bake: Preheat oven to 200°C (400°F). Place salmon
on a parchment-lined baking sheet and bake for 8–10
