Rome is my favourite city, glad you enjoyed it! Also the carbonara looked great, ever since I tried authentic carbonara I always make it that way with actual guanciale (instead of the cream based version with bacon) – it is eye opening. I recommend you go to Florence if you get the chance, try the sandwiches at All’Antico Vinaio, they are world famous (when I went I had to go 3 times they were that good!), and then try the bistecca alla fiorentina at a good restaurant (huge tomahawk steak from a specific kind of young cow – their main dish). You will not be disappointed.
