Ingredients:
-3 celery stalks
-3 carrots
-1 small white onion & 1 shallot
-3-4 cloves of garlic
-1 tbsp of olive oil
-1 tbsp tomato paste
-1/2 cup of red wine
-1 cup of tomato puree
-ground beef/veal/pork (or any meat of your liking)
-reserve 1/2 cup your pasta water
-pasta of your choice ( I used Dececco)
-Parmesan cheese
-fresh parsley

Seasoning/Herbs (1 tbsp of each):
ADD HALF TBSP WHEN VEGETABLES ARE COOKING THEN THE REST WHEN MEAT IS ADDED.
-sea salt & black pepper
-garlic & onion powder
-herb mix (I used an everyday Italian blend)
-dried parsley
-garlic & herb blend
-2 sprigs of thyme
-2 bay leaves

STEPS:
-Using a food processor, finely mince all your vegetables, add olive oil to your pot on medium heat & cook your vegetables until the water has evaporated out (about 10-12 mins)
-Add your seasonings (reserve half after you’ve added in the meat)
-Add your meat and the rest of your seasonings and make sure to cook out the moisture from the meat (about 15-20 mins)
-Add your wine, tomato paste & puree within 5 minute intervals to make sure everything is cooked out & well incorporated
-Submerge your bay leaves & thyme and cook sauce with lid on for about an hour to an hour and a half
-Cook pasta as instructed; reserving 1/2 cup of water
-Transfer about 1 cup worth of sauce to a saute pan, add your pasta and pasta water and toss the sauce 😉
-Garnish with freshly grated Parmesan cheese and parsley & enjoy!
