  1. You should try doing it with raw corn. Here in north texas I can get the sweetest softest corn these days and it's a crime to char it. I've even converted my die hard Mexican mother that raw is the way for the next month or so.

    You just let it marinate a bit in like juice and salt to break down a little bit and it's absolutely crazy style

  2. disagree with the overcooking of the pasta. i find its better to slightly undercook the pasta and make the dressing more liquid / add more dressing, so it absorbs it and gets softer. i don't wanna eat mushy salad

  3. i really had to just sit and take a moment after you hit them with the torch. THIS HAS ELUDED ME FOR YEARS WHY DIDN'T I THINK OF THAT.

  5. This looks awesome! Not a fan of jalapeños, but red (& yellow & orange) peppers give the same texture and food family flavour without the heat. Chipotles in adobo is plenty hot 🥵 enough for me!). Thanks for your recipe, Ian.
