Years ago I shared a video where I attempted to cook American BBQ for some of Eva’s family here in Italy. If you’ve seen that video, you know it didn’t go extraordinarily well…

Now I’m back for redemption! But this time I’m biting off perhaps a little more than I can chew and cooking for MANY more Calabrians. The pressure is on.

In order to pull this off and do my country proud, I’m going to need some help from my American family…

  2. I love ribs, but i dont have a smoker, I cook then in the oven.
    Here's a super easy recipie:
    -preheat oven to 285°F
    -get 1-2 racks of Baby back ribs
    -peel the sinue off of the inside
    -tamp dry
    -use Mustard as a binder and cover the ribs
    -add seasonings you like
    -lay out tin/aluminum foil and place ribs on them inside down, then fold up the edges of the foil to cover the ribs (if it doesn't completely cover tear off another piece of foil to completely cover it)
    -place foil covered ribs on a single baking sheet (side by side if doing 2 racks)
    -put in oven for 3 hours (3.5 hours for 2 racks)
    – remove and peel open the top of the foil exposing the ribs then put back in oven for 20 minutes
    -pull out and add a layer of your choice of BBQ sauce to the top of the ribs then put back in oven for 10 minutes
    -put oven on high broil for ~1-3 minutes to caramelize the BBQ sauce on the ribs
    -remove and turn off oven and let ribs rest for ~5 minutes
    -ribs should be juicy and fall off the bone

  3. we share the same philosophy on BBQ. "If it needs bbq sauce, you did it wrong" and i use the same seasoning as you do, salt and pepper.

  4. You should 100% be stoked about this not over whelmed. I have seen many videos of folks from around the world trying American food for the first time and i havent heard a negative comment yet. Im from Texas and ive never seen Biscuits and gravy make a grown man weep until i saw 2 videos of an Australian and a Scottish guy try it for the first time. The people of that village are wholesome and have big hearts.

  5. It’s funny in the U.S. we eat Americanized Italian food but you guys made italianized American food in Italy.

  6. I realize you want to make it Italian, however, real American BBQ has BBQ sauce. You should have been bold and at least offered it. You did not. It was a celebration of the greatest American holiday celebration. You could have at least tried and not be scared.
