  2. Because not everyone lives in Spain or Italy or whatever, so if you used tinned you’ll get the best tomatoes from the best time of year

  3. The canned tomatoes EVEN HIGH END restaurants use because they are a very specific kind of tomato. Whatever you used, aint that. So no.

  4. Cooking the sauce before the pizza means you're cooking it twice. It ends up tasting like tomato soup instead of pizza sauce. Pizza sauce should be bright and tangy

  5. the love of canned tomatoes isn't inexplicable lol, they have much better flavor than fresh tomatoes for 90% of people because most people don't live somewhere with prime season fresh tomatoes available. canned > off season fresh any day.

  6. Agree in theory but unless you’re growing your own tomatoes the ones in the grocery store don’t really have much flavor. That’s where a quality canned whole San Marzano tomato comes in or grow your own. 😊

  7. This honestly makes no sense to do it. Just take some good quality canned tomatoes like they do in almost all pizza places and be done with it.

  8. i do this with home grown tomatoes during the summer but i dont cook them down, i just blend everything raw and then it cooks on the pizza. Its a little lighter and also less likely to trigger heart burn if youre like my dad and I who can have it triggered by tomato sauces 😅

  9. It's a lot easier to get a proper tomato out of a can during cold seasons/climates than hoping the imported one is still properly fresh/ripe. Even if it were, it would cost more depending on where you're at. I'm good with canned. That said, I live in the middle of nowhere Midwest with a decent sized greenhouse with climate control and everything else for a garden of veggies, flowers, a room for mushrooms, and a collection of healthy bee hives nearby. I've got fresh stuff most of the year, if not all with how we're not getting long hard winters anymore.

  10. Just use San marzano tomatoes, 1 clove or garlic finely chopped, small amount of salt and lots of basil. Nothing else. You shouldn't be overwhelmed with sauce. Focus should be on the toppings complement with a light easy sauce.

  12. Pretty much, I’ll do fresh cherry tomatoes when they’re in season, and canned San Marzano tomatoes the rest of the year

  13. Canned tomatoes arent Always Bad
    When the are harvested and canned while Prime season they can taste better than fresh tomatoes when its Not Prime season

  14. Because canned tomatoes are affordable and consistent. You want to grow San Marzano's yourself (you can't unless you live in Campania) be my guest, but those are bar-none the best sauce tomatoes and are excellent for canning.

  15. Never liked the cherry or plum tomatoes on pizza. Too strong and overpowering plus more skin to actual tomato.
