Italian Mussels Marinara Recipe:
Prep Time: 10 minutes
Cooking time: 20 minutes
Servers: 4-6
Pot size: Large
Ingredients:
2 lbs Fresh Mussels
1 lb Linguine or Spaghetti of your choice
1/2 cup extra virgin olive oil
6 cloves garlic finely chopped
1 tablespoon garlic powder
1/4 teaspoon red hot pepper or just a pinch (optional)
(1) 28 oz can of authentic whole San Marzano tomatoes, after opening crush by hand.
(1) 8 oz. can of hunts tomato sauce
1 tablespoon oregano
10 leaves fresh basil
1 cup dry white wine, (prefer Pinot Grigio or Chardonnay)
2 teaspoon salt and pepper to taste
Directions:
Please note any mussels that are opened before cleaning, please discard! ❌❌❌
Wash the mussels in cold water and brush clean, pull off the beards if any. Pour 1/2 cup olive oil in a large pot, add chopped garlic, 1 tablespoon of garlic powder, salt, pepper and sauté. Add the San Marzano tomatoes, Hunts tomato sauce, oregano, fresh cut up basil, garlic powder, basil, 1 cup of white wine, 1 pinch of crushed red pepper, cover and cook on medium heat for 5 minutes, sprinkle a pinch of red pepper. Once the marinara sauce is bubbling add the mussels. Cover and simmer for an additional 15 minutes until all mussels have opened. Drain the pasta and put into a large bowl, pour the mussels marinara over the pasta. Ready to serve.
