Katsu Sauce:
1/2 cup ketchup
1/4 cup Worcestershire sauce
2 Tbsp soy sauce
2 tsp Japanese mustard (karashi)
1 Tbsp sugar
1/2 tsp garlic powder
1/4 tsp ground ginger
1. Mix everything together. Store in a sealable container in the fridge for up to one week.

I am such a sandwich person. One that really impressed me was one from Izmir in Turkey. Grilled spicy sucuk (kinda like a Turkish chorizo), grilled Turkish salam, grilled cheese similar to the Greek saganaki (kefalograviera) and fresh tomatoes on a special chickpea based bun with sesame seeds. Best with added creamy cheese, pickled spicy peppers, ketchup and mayo. Out does a döner kebab IMHO.

So my top three are a Reuben and a Cuban with the Italian sandwich in a very tight third but I’ve been trying to figure out how to mix or Frankenstein for the purposes of what you do the Cuban and Ruben the names are the same. They’re my top two sandwiches And I’m trying to figure out how to do it perfectly. It’s definitely bread from the Cuban but I also need the caraway and rye flavor. Clearly there’s mustard clearly there’s 1000 island there’s all three meats that would be pastrami or corn beef whichever one you like, and then the ham and then the roast pork You have to keep the pickled cabbage I just don’t know my ratios yet and I guarantee you that sandwich slaps and if you want to take it, go ahead and take it go get a food truck come up with a funny name cause Cuban and Ruben rhyme I just made you a millionairejust send me 20 bucks y’all have a good one
It's kinda sad that the US just mixes a bunch of shit from different countries and the only appeal is abundance. There's value in making good food with little means. Abundance doesn't make up for identity.

Great video! I’m sure a lot of people are griping about the banh mi. The only banh mi I want anymore isn’t traditional at all: my wife’s at her restaurant Basquenese. Call me biased if you want, but there’s a reason why most of her customers say it is the best banh mi they’ve ever had.

Thank you for making this series! I've enjoyed watching various regional or national champions from around duke it out in your kitchen. I was not surprised by the winner. When it comes to that perfect balance of bright, salty, and sharp flavors with the cool, crisp veg, it's hard to compete with the Italian sub. There's no such thing as a bad one. Even school cafeterias in New Jersey do a pretty good job of it, and they're working with Oscar Meyer on a good day. But those premium meats, cherry pepper relish, and tiny pops of onion push it to the top of S tier. I was disappointed that that Pan con Chicharron didn't do better. Not only do I really want to eat that bread, but those sweet potatoes and that aja amarillo mayo sound incredible. I'm going to have to get myself some pork belly and make one, some weekend.
