Chicken Valdostana Recipe 🧑‍🍳

Serves: 4-6

Ingredients:

2 chicken breasts, sliced lengthwise
1/2 cup extra virgin olive oil
4 tablespoons butter
8 tablespoons flour
2 teaspoons salt
1 teaspoon pepper
2 cups sliced mushrooms
1/2 cup dry white wine
1 cup organic chicken stock
4 tablespoons butter (additional)
2 tablespoons flour (for sauce)
8 slices Fontina cheese (1/2 inch thick)
4 slices prosciutto
3 tablespoons parsley

Directions:

Pound the chicken breasts and set aside.
Mix flour, salt, and pepper on a platter.
In a heated saucepan, add olive oil and 4 tablespoons of butter. Coat chicken with salt and pepper, then dredge in flour. Sauté for 5 minutes on each side, then plate the chicken. In the same pan, add mushrooms, stir, and cover until browned. Add wine, chicken stock, additional salt, pepper, and butter. Raise heat, cover, and simmer for 3-4 minutes until bubbling. Add 2 tablespoons of flour to thicken the sauce and sauté for a few more minutes. Top each cutlet with prosciutto and Fontina cheese. Return chicken to the sauce until the cheese melts.
Plate and drizzle with sauce, garnishing with parsley.
