Resharing a long long time favorite and summer staple, this potato and tuna salad is a must especially on days when it’s so hot you cant even think about turning the stove on! Recipe below!
RECIPE:
1lb of Russet Potatoes
8oz Green Beans
7oz can of Tuna packed in Olive Oil
Thinly Sliced Red Onion, to taste
Handful of Olives
Parsley
Handful of Cherry Tomatoes, halved
Salt and Oregano to taste
1/3 cup of Extra Virgin Olive Oil
1 Tbsp of Red Wine Vinegar or more to taste

Tip: when you are using tuna out of a can, whether it’s in water or whether it’s packed in oil, do you want to empty the whole can into a separate bowl with the water in the oil? It was packed in and then mash the tuner until it reabsorbs all the water or all the oil that way all of the omega-3 that isn’t sitting inside that water in that oil is absorbed back into the meat, and the meat won’t be as dry, and it will be a healthier tuna.

My parents are Sicilian (I also lived there). I have seen MANY versions of this salad…this is the closest as to how we make it. No olives…If we have cucumbers we add those too 😋 BRAVA!
