CAN BE USED FOR: CALZONES, PIZZA OR ITALIAN BREAD
2 cups of unbleached or bread flour (use the ½ cup measuring cup making sure each is “rounded”)
7 ounces of warm water (heat in glass
measuring cup for 20 seconds in the
microwave)
2 tablespoons sugar
2 teaspoons yeast (bread machine instant)
½ tablespoon salt
¼ cup olive oil

USING KITCHEN AID MIXER:
Rinse Kitchen Aid bowl with hot water (to warm up the bowl). Add warm water and sugar to bowl. Scoop flour on top of water and make a well in middle. Add salt to well, then add yeast to the salt. Pour olive oil down side of bowl (do not let it touch the yeast). Add dough hook to Kitchen Aid and start on slow. Once it is mixed enough (where flour will not go everywhere!), put speed up to 2. After one minute, check dough: if too sticky, add a little flour, if too hard, add a little olive oil. Mix for 10 minutes.
When dough is finished mixing, put some olive oil in a gallon size ziplock. Remove the dough from the bowl and work into a ball then place in the bag and zip closed. Keep in refrigerator for one day.

FOR ITALIAN BREAD:
Spread a little olive oil onto cookie sheet. Take dough out of fridge and work back into a ball then place on cookie sheet and cover with tea towel. Let sit for 30-45 minutes, then stretch dough and roll into tight log.
Beat egg with 1 teaspoon of water. Spread egg mixture over dough then sprinkle with sesame seeds, then push seeds lightly into dough. Let rise 30 minutes covered with tea towel.
Cook at 350 degrees on lower rack in oven until top is brown (about 20-25 minutes).
