How do you end up finding out your clients dont like something or the way its cooked? Do you talk with them beforehand, or do they tend to tell you after the fact?
Food looks amazing and just enough to make my stomach angry. This may be because my perception of what a normal portion is, I'm no Brian Shaw 6'8" 430lbs I am 6'4" and I'd be asking where the rest of it was. Regardless, he's cooking what and how much they want. He amazingly considerate and insightful. He seems like a good person along with being a great chef.
