Ingredients
– 500ml chicken broth (you can also use a chicken soup cube)
– 250g short grain Arborio rice
– 130g butter 80% fat
– 300g sea fruits
– 100g parmesan
– 120ml Sauvignon Blanc wine or other young white wine
– 3/4 tsp pepper
– 1 tsp salt
– 2 garlic cloves
– a handful of fresh parsley

Start boiling your rice on low-medium heat adding the chicken broth gradually until totally absorbed.Put it aside and cover it with a lid.Take a pan and start melting butter on low heat at first.Add garlic,salt and pepper mix together and afterwards add the sea fruits together with 40 ml wine and cook it for about 2 minutes on medium-high temperature stirring constantly to avoid burning the garlic.Add fresh parsley into the pan and let the flavor blend in by cooking it on low heat for 1 minute.

Add the fried sea fruit mix into the rice pot together with butter and let it cook until it melts on low heat stirring occasionally for about 5 minutes.Add the remaining 80 ml of wine and cook on medium-high heat stirring constantly until the texture of the rice is creamy and the alcohol evaporates.Afterwards add the parmesan and mix until it melts and integrates into the rice.
