Love Marco, but sometimes his quantities baffle me. The smallest amount of basil? Looks like iv emptied my lawn mower box. But then that's my choice.
Just the tiniest bowlful of olive oil
Lemon, olive oil, crystal salt, basil… or you can use oranges, vinegar, white pepper, and cilantro… it's your choice
doesn't seem that flavorful, just lemon and salt on fish … and that tomato stew which will be mild. needs something more
I like to add 2 knorr stock pots, my dear mother would add 3, but I add 2
It was the basils choice to be a heaping handful.
But the middle fish is always in the middle of the pan , it never moves from the bulls eye
Could do with a stock pot, for me.
Pretty sure I’ve seen videos of him saying “don’t move the pan. If you have to move the pan, you don’t understand the heat” or some mumbo jumbo like that 🤣

Sorry but you have to do higher heat on the skin to get it brown and crispy.
Otherwise its soft and slimy.
Thats why people dont like fish skin.
