Pasta Aglio e Olio Recipe
Ingredients:
200g spaghetti
5 cloves garlic, thinly sliced
1/2 tsp red chili flakes (adjust to taste)
1/4 cup olive oil (extra virgin preferred)
Salt (to taste)
Freshly chopped parsley (optional)
Grated Parmesan cheese (optional)
Pasta water (as needed)
Instructions:
1. Cook the Spaghetti:
Boil a large pot of salted water.
Add spaghetti and cook until al dente (firm to the bite).
Reserve about 1 cup of pasta water, then drain the rest.
2. Prepare the Garlic Oil:
In a pan, heat the olive oil over medium heat.
Add sliced garlic and sauté until golden brown and fragrant (be careful not to burn it).
Add chili flakes and stir briefly.
3. Combine Pasta and Sauce:
Add the cooked spaghetti to the pan.
Pour in a bit of reserved pasta water to loosen the sauce.
Toss everything together until the pasta is evenly coated and glossy.
4. Serve:
Garnish with chopped parsley and Parmesan if desired.

Making this tonight. Looks fantastic. I'll add a tbsp of unsalted butter, just for flavor.
