A smoky, spicy, and rustic dish made with roasted tomatoes, garlic, dry red chillies, and onions. This Tomato Bharta is simple, flavorful, and made without any mixer — just your hands and a few basic ingredients. It tastes delicious with hot steamed rice and Paratha.

  1. Tomato Bharta

    Ingredients:

    3 medium tomatoes

    1 medium onion (chopped)

    3 dry red chillies

    4 to 5 garlic cloves

    Salt to taste

    Fresh coriander leaves (chopped)

    Oil for cooking

    Method:

    1. Heat some oil in a pan.

    2. Add 3 dry red chillies and 4 to 5 garlic cloves. Fry until golden brown and slushy. Remove and keep aside.

    3. In the same pan, add 1 chopped medium onion. Fry until golden brown. Take it out and keep aside.

    4. Cut the tomatoes in half and place them cut-side down in the same pan. Cover and cook for a few minutes.

    5. Flip the tomatoes, cover again, and cook until soft and roasted from all sides.

    6. Turn off the flame and let the tomatoes cool slightly. Peel off the skins.

    7. In the same pan, add the peeled tomatoes, fried onion, crushed red chillies, and fried garlic.

    8. Add salt to taste.

    9. Mash everything together using your hands to make a smooth bharta.

    10. Add chopped fresh coriander leaves. Mix well and serve.

    It tastes delicious with hot steamed rice.
