Gnocchi:
1 lb sweet potato
1 egg
1/2 cup grated Parmesan cheese
Salt
Pepper
2 cups flour

Sauce:
2 tablespoons unsalted butter
5-7 sage leaves
Grated Parmesan
Gnocchi cooking water

Process:
Roast the sweet potatoes in a 375 degree oven for 1 hour. Allow to cook then peel. In a mixing bow mash the potatoes then add the other listed ingredients. Mix well then using your hands knead the dough till a ball forms. Cut the dough in quarters. Roll one of the quarters into a rope then cut off 1/2 inch pieces. Use a gnocchi roller or back of a form to roll the gnocchi pieces. Melt the butter in a pan then add the sage. Cook until the butter turns a light brown color and smells nutty. Boil the gnocchi in lightly salted water until they float. Add the gnocchi into the butter and continue to cook for 2 minutes. Add a couple tablespoons of cooking liquid and grated Parmesan cheese. Plate in a shallow bowl and top with more cheese.
