I know that this is a history of food channel, but parchment paper used between the food and foil will keep the ribs more moist and take out any metallic flavor.

For some reason, marinating the ribs with coriander, rubbing them with coriander and then pouring coriander sauce over them feels wrong. I don't doubt it's delicious, or what Scappi intended, but some part of me is insisting that it should either be the marinade, the rub or the sauce, not all three at once lol.

Tasty as hell.
I recommend you really buy sapa if you want it. You spend just as much on grapes making it yourself and it takes hours to do.
Imagine holding out for THAT LONG — in THOSE conditions — just to completely disregard the choices and choose someone who isn't even a part of the equation 😭😭💀💀
