  1. For the last time: I understand it’s an inspiration but paella has never, EVER, HAD CHORIZO. WHY IS IT ALWAYS CHORIZO??

This is what I started watching Top Chef for … I miss the 7-11 challenge … they got me on the first season and then left it … give me 7-11, Dollar Tree, Sheetz, or Wawa …. truffles are boring, give me a Slim Jim … give me a big mama red hot pickled sausage … Give me a bottle of mtn dew livewire!!!!!!!!

  3. I barely have the income to afford food from a dollar store. All of my other friends don't even shop at Dollar stores. How and why would I impress anybody with Dollar store ingredients.

  4. There is a Kraft plant that makes Philadelphia Cream cheese in Lowville, NY about 30 minutes from my house. They have a cream cheese festival every year. Lowville likely has more cows than people. Anither random Lowville fact is the actor who played Charlie, in Charlie and the Chocolate Factory was a Large Animal Vet there, possibly still. So the cows that make cream cheese were cared for by Charlie.

  5. This could have been an episode of chopped. Josh for sure could win an episode just based off of these challenges.

  6. Maybe you do not start off right away with Top Chef, but I could definitely see you making it really far, if not winning Next Level Chef. That competition is meant for you. Pros vs. social media vs. average joe home cooks also the element of random ingredients turning nothing into something.

  7. Gail is one of the longest running crushes of my life. Been watching every season of Top Chef since day one's premiere. Like fine wine.

  9. Josh is using one of my favorite tricks…. instant mashed potatos are AMAZING to use as a binder on a budget. I like to take the various flavored idahoan instant mash and make them, add stuff to them like cheese and sausage and or shrimp cheddar and old bay … use your imagination, and then toss globs of it into a waffle maker and let it turn into a crispy golden GIANT STUFFED WAFFLE FRY

  10. I make those instant potato croquettes all the time for dinner, with tuna, spices, and olive oil. Then I dry roast them so the oil leaks out and browns the bumps.

  12. you should let the judge review the dish then tell them it's slim jims and lunchables. but i understand less chefs wouldm't sign up for the chance to be bamboozled on accident

    Once you tell tell them, like a slim Jim, you can pick the flavor out immediately, you become biased.
    I feel like the best “fancy” foods are basically elevated versions of our faves, right?
