Italians Hate This Spam “Carbonara” But It’s Crazy Good!

Wikipedia says “Carbonara is a pasta dish made with fatty cured pork, hard cheese, eggs, salt, and black pepper”. I ran out of pork and eggs so this happened. Spam probably has some pork? Kewpie mayo has egg in it so technically it’s carbonara… Sorry Italy

Ingredients

– Spam
– Salt
– Black pepper
– Olive oil (I used leftover pork belly fat)
– Kewpie mayo
– Parmigiano reggiano and grana padano (or parmesan)
– Pasta

Directions

0. Cut your spam into cubes
1. In a bowl, mix your cheese, mayonnaise, black pepper
2. On medium heat, saute your spam cubes in a pan and in salted boiling water, cook your pasta following the package instructions
3. Once cooked, add the pasta, pasta water, and spam to the bowl and mix until emulsified
4. Add salt and pepper to adjust the taste to your liking and enjoy! (Sorry again Italy)
