Italian Gnocchi pasta
Ingredients:
500g cooked potatoes
200g of all-purpose flour
1 tbsp salt
1 egg
2 tbsps olive oil
2 garlic cloves
600g tomato sauce
Indications:
Mash the potatoes while they are still hot, then incorporate them with the flour and mix. Add the egg together with the salt and knead until you get a smooth mixture. Divide the dough into 4 parts, then stretch it by rolling each part and cut small equal pieces. You can shape the gnocchi with a fork or with a specific tool. Cook the gnocchi in boiling salted water. They will be cooked after about 3 minutes when they float. Mix them with the tomato sauce for 3 minutes and serve with parmesan.
To prepare the sauce, you need to heat 2 tablespoons of olive oil with 2 whole cloves of garlic, after the garlic is well browned, remove it and add the tomato sauce with 1 and a half teaspoon of salt and a pinch of sugar to correct the acidity of the sauce. Finally, add some fresh basil and leave to cook for 30 minutes over medium heat with the lid on.
