Where is the long form version of this? Are we assuming these zucchini are fried? It looks like it before putting it in a pan with cheese and spaghetti.

I didn't like this version Chef John. I tried. But I love spaghetti with shredded zucchini, stirred in a bit of oil instead of deep fried. But this is the recipe that have me the idea.
I did who the hell is the guy that supposedly loves this pasta, and went on a tirade about it, and why should I care enough to go out of my way to try it? It honestly gives me a curious outlook on a similar version with fried yellow summer squash if it's, as I kinda assume, a nice earthy quality like eggplant? The smaller eggplants are best.

I had three zucchinis sitting in my crisper for 2 months just waiting for me to make this and I never did.. I tossed them last week. I was somehow too intimated even though I'm Italian and have been a home cook since I was like 12. Please tell me why you post this and I was diagnosed with fatty liver yesterday 😭😭😭 I've made so many of your recipes and now I'll actually never be able to make this if I don't want a death sentence!
