This is Stimpirata (also spelled “stimpiratu”), a Sicilian dish that typically involves vegetables such as carrots, celery, onions, and sometimes olives and garlic. It’s often prepared as a sautéed dish, usually served as a side dish or as part of a larger meal. This one was delicious, especially as the olives were homemade by our ladies!

I feel like every great food culture, like this one, has a ubiquitous pickled vegetable condiment. Thanks for sharing!

IS that mint at the end? Olives and mint I would never have thought of that.

Are the olives salty? Or are they just canned?
