This is Stimpirata (also spelled “stimpiratu”), a Sicilian dish that typically involves vegetables such as carrots, celery, onions, and sometimes olives and garlic. It’s often prepared as a sautéed dish, usually served as a side dish or as part of a larger meal. This one was delicious, especially as the olives were homemade by our ladies!
