Ingredients (for 2 servings):
200g spaghetti
4 cloves garlic (thinly sliced)
4 tbsp extra virgin olive oil
1 tsp red chili flakes (adjust to taste)
Fresh parsley (chopped)
Salt (to taste)
Freshly ground black pepper (optional)
Grated Parmesan (optional)
Instructions:
1. Cook the Pasta:
Bring a large pot of salted water to a boil.
Cook spaghetti according to package instructions until al dente.
Reserve ½ cup of pasta water, then drain the pasta.
2. Prepare the Garlic Oil:
In a large pan over low heat, add olive oil.
Add sliced garlic and red chili flakes.
Cook slowly until garlic is golden and fragrant (do not burn it!).
3. Combine Pasta & Sauce:
Add the drained pasta to the pan and toss well.
Pour in a little reserved pasta water to create a silky sauce.
Stir in fresh parsley and mix well.
4. Serve:
Plate the pasta and drizzle with extra olive oil.
Optionally, add black pepper and Parmesan cheese.
Serve hot and enjoy!
