About 1/2 cup of flour to baste your eggplant strips
1 Medium Onion (diced)
3 Cloves Garlic (crushed)
Fresh Mozzarella Cheese to Roll up in the Eggplant and for Topping After
500 g Good Quality Tomato Sauce (Passata)
Fresh basil leaves (about 4 leaves in the sauce and more for topping)
1/2 cup Parmigiano Reggiano (more for topping)
Salt and Pepper to Taste
