Ingredients

1 pound (500g) spinach leaves
olive oil
1 small onion, finely chopped
6 garlic cloves, grated
1/2 pound mini pasta shells or fusilli pasta
salt, to taste
freshly cracked black pepper to taste
1 teaspoon dried dill
grated kefalograviera or Parmesan cheese
feta cheese
juice of a fresh lemon
Instructions
Prepare the Spinach:
Heat a few tablespoons of olive oil in a large pan over medium heat.
Add the onion and sauté until soft and translucent.
Stir in the garlic and cook for about 30 seconds until fragrant.

Add the spinach and cook until wilted. Season with salt, pepper, and dried dill.
Cook the Pasta:
5. Bring a large pot of salted water to a boil.

6. Add the pasta and cook until al dente. Reserve ½ cup of pasta water, then drain the rest.

Combine Everything:
7. Add the cooked pasta to the pan with the spinach mixture.

8. Stir in the reserved pasta water a little at a time to loosen the sauce.

9. Add grated kefalograviera or Parmesan cheese and crumbled feta. Toss everything together.

10. Finish with a squeeze of fresh lemon juice for extra brightness.

Notes

Use any pasta shape you love! Mini shells, fusilli, or orzo work great.
For a richer flavor, stir in a knob of butter before serving.
Make it extra creamy by adding a splash of heavy cream or Greek yogurt.
Want more protein? Toss in grilled chicken, shrimp, or chickpeas.
Love spice? Add a pinch of red pepper flakes for heat.Music Used:

  4. Simple, flavorful, and pretty. The holy trifecta. I'll be making this over and over. With little changes here and there. Maybe add in some mussels.

  5. Yumm😋….however what intrigues me is that salt is being added to this recipe separately when Feta cheese has lots of salt in it already?…hence…are we sure that we need to extra salt in this recipe?🤔
