The eighth-generation butcher Dario Cecchini adores bistecca alla fiorentina, a thick steak of Chianina beef, the largest breed of cattle in the world. He serves it at his restaurant-cum-butcher’s in Panazano, Tuscany, where he puts on a rustic show for hungry guests from all over the world, who come to see the famous butcher in action. He believes in using every part of the animal and showcasing regional products and recipes.

  1. All the people here who, from foreign countries, write they visited Dario Cecchini's restaurant are rich, quite rich i'd say. This not the real life, i mean, this is the real life for rich people only, we italians at the most don't live happy and classy as mainstream/stereotype say. The truth is that Italy, like the whole Europe, is dying for many reason i'm too lazy to explain.

  4. Hot damn, Dario Cecchini is a colourful character, to Beef or not to Beef, Carne Diem… this guy looks like a hoot. A visit to his place is worth it if he is there!

  5. Italy doesnt have meat tradition like other countries, such as Argentina, Brazil and Usa-Texas; and Fiorentina (or T-bone) should be prepared medium, not rare. Rare is like ordering a chewing gum

  6. i was in that restaurant last summer, there was an option for meat and vegetarian, my wife does not like beef, the vegitarian menu was…….na not that good, just some garnish. the beef menu ? the best part was a spoon full of tartar, and just 1 or 2 peaces wich where good, the rest was just chewy and had no taste. and there was no live cooking, and on the bottom of the placemet / menu i read : we select our meat from young catle in spain – it was not the best meal i had, very disapointing actually
