How do you fry the garlic without it being bitter? I burned garlic once and ever since I've been massively paranoid about burning it any time I cook. 😭
from one chef to another i never peel beautiful carrots like these! why?! lightly clean em with a green scrubby, keep more nutrients and they still look like carrots and more natural.
also the grill marks are so out of fashion. it's not a good sear, it also just causes burnt bitterness. get a good sear all over not worrying about the crosshatch and you wlll get a better crust.
