Gordon Ramsay’s:
10 ounces cauliflower florets
10 ounces dried macaroni
4 Tbsp butter, plus a few extra chunks
¼ cup all-purpose flour
2 tsp English mustard powder
2½ cups whole milk
Pinch of cayenne pepper
Sea salt, to taste
4 ounces sharp Cheddar cheese, grated
3 ounces Gruyère cheese, grated
4 ounces Monterey Jack cheese, grated
3 Tbsp fresh white breadcrumbs
1 Tbsp thyme leaves
Anthony Bourdain’s:
1 pound dry elbow macaroni
5 tablespoons unsalted butter
5 tablespoons all-purpose flour
4½ cups whole milk
2 teaspoons mustard powder
2 teaspoons ground cayenne pepper
1 teaspoon Worcestershire sauce
8 ounces Parmigiano-Reggiano cheese, grated
4 ounces Gruyère cheese, grated
5 ounces sharp cheddar cheese, grated
3 ounces fresh mozzarella cheese, cubed
4 ounces cooked and thinly sliced
ham, julienned (optional)
2 teaspoons salt, or more to taste Freshly ground white pepper to taste (optional)
Thomas Keller’s:
8 ounces small elbow macaroni
3 cups Mornay Sauce:
– 4 tablespoon unsalted butter
– 2/3 cup diced yellow onion
– salt
– 1/4 cup all-purpose flour
– 2 2/3 cup milk
– 1 1/3 cup heavy cream
– 1 bay leaf (2 if you’re not driving)
– 4 black peppercorns
– 4 whole cloves
– Pinch of freshly grated nutmeg
– Pinch of freshly ground white pepper (or substitute black)
– 1/2 cup emmentaler cheese (or comté)
Heavy cream if needed
1 cup sautéed wild mushrooms or
½ cup julienned Bayonne ham (optional)
Kosher salt and freshly ground white pepper
Freshly grated nutmeg
2 to 3 teaspoons minced thyme
½ cup grated Comté or Emmentaler cheese
2 to 3 tablespoons panko (Japanese bread crumbs) or dried bread crumbs

2 teaspoons NOT 2 tablespoons! My friends, I misspoke during the review part of this video. Anthony Bourdain’s recipe is 2 tsp of cayenne pepper. Please don’t add 2 tb… unless Danger is your middle name.

If you ever do another mac and cheese cage match, look at Hawksmoor (british steakhouse) and their recipe. Its very good.
Those box graters are hellish. The coarse graters by Microplane (knockoffs are usually rubbish) are much better for grating cheese. If you grate a lot of cheese there are rotary hand-cranked graters that can easily grate 600 grams in surprisingly little time but are less trouble to clean than most food processors. Or, yes, just cover most of the dishwasher’s top rack with bits of food processor, if you have a dishwasher.

Now I need to make some! I'm going to use a bit of Anthony and Gordon mixed and see what happens.
My personal recipe? Beer cheese mac and cheese, using a super strong more acidic IPA beer…and sauteed onions left in the final product. Still gets a little nutmeg..but I'll try the mustard addition.

Without seeing the end of the vid, Bourdain's wins hands down. It's Mac and Cheese. That's it. Flavorful and simple bursting with taste and cheesy goodness.

Tony's looks like the yummiest. I'd leave out the cayenne. I don't like spicy.
I have the Bouchon book also and my feelings on TK are so mixed. Like, a lot of the stuff that I try to make out of there just doesn't… work. Like I'm 100% doing something wrong and my ingredients simply aren't good enough to make something truly remarkable. I know that. But I just have kind of a high miss rate with TK stuff. It's frustrating. But when it does hit, it's an absolute classic, something people remember on for years. Lookin' at you apple fritters. Also the standard vanilla ice cream. Someday I'll make both at the same time.

I’ve come to dread the addition of bay leaf to any of your videos. It’s become a joke that grandma tells over and over and over again. It was remotely humorous the first few times. Now it’s only humorous to the nursing home crowd that’s forgotten they’ve heard the whole “I’m not driving” bit countless times before.
