I would turn the canteena into the kitchen/dinning. And that back room into a pantry and storage room. And replace the stair cases. And turn the first bed room into the lounge. And where the kitchen and dinning are now, I would make that the master/owners suite.
It's perfect. There are not too many stairs to navigate, and there is lots of space. I'd convert the cantina to a laundryroom, for starters, and open the kitchen as you suggested. There's a lot of good light in the home, but it's great that you remembered your torch and measurer 😂. This wont be on the market for long. Thanks to Domenico for the roof terrace tour. 😊

Only one little suggestion. As an architect, spiral staircases are a disaster for anyone who isn't youthful. Children, middle-aged, physically challenged and those of us who are considered to be elderly….but young at heart and want easy ways to go up & down…spirals are a disaster. They are slippery, dimensionality & uncomfortable.
In this video, I am sure a regular switchback stair can be fit into that space with widening the floor hole.
Just a thought for you to consider.

I wouldn't change much, except for decorating. I'd make the ground floor bedroom on the left into a parlour/guest bedroom, make the first floor dining room into a bedroom, and make the current bedroom there into a lounge.
Structurally I might make the cantina into a rustic summer kitchen with a small shower room/wc, and have a pantry in the last space. I'd set it up so the cantina could also function as a separate studio apartment (for when my knees can no longer handle stairs, … although I could have a "stair glide" installed when that day came…🤔)

I would put a spa in the cantina with a steam room, hot tube, dry sauna & small cold plunge.
David – every time I see this type of home with "new" parts that are only "100 years old" I can just imagine the richness of the family times spent in these rooms! Just to think about the world history that played out while simple lives were being lived in this Italian home and village is powerful. That sort of character is worth something just on its own. These places are like visiting "residential museums" (). Stay well – regards.

How difficult would it be to transform this cantina into a self-contained studio flat? (Few windows, some pipes, and lots of permits, I presume) on a scale of 1-10? 🙂

I guess I lack vision… to me this property looks a bit like a dog’s breakfast, at least in its current state… The history is impressive, though, and the views are quite nice.
