  1. They cook the meat medium rare to,it's just that some meat looks less cooked. I came across a similar situation where I fought the meat nearly raw but when I took a slice the meat was melting in my mouth like butter

    As long as it hits 145 youre good. And a lot of people need to realize that about food in general. Once it reaches a certain temp. Everything is fucking dead. If you freeze dried raw beef and ate that it would be perfectly safe, everything is dead in it.

    And with beef, as long as it isn't ground, most bacteria is on the outside. And beef has gotten so safe parasites are fairly uncommon. So if you wanted to you could sear a steak, leave the inside raw, and in all likelihood you'll be perfectly fine. Its why tartar is perfectly safe.
