Today we are talking about Amado Forés paying tribute to Margarita Forés. In the world of cooking, some names are remembered for their passion and skill. Margarita Forés was one such name. She was a famous Filipino chef known for mastering Italian cuisine and bringing it to the Philippines. Today, we celebrate her legacy through the eyes of her son, Amado Forés, who is also making a name for himself in the culinary world. Amado did not start his career as a chef. He studied political science and worked in a Filipino restaurant in New York, where he discovered his love for cooking. He later learned more about food and started his own restaurant group called AF Hospitality. His restaurant, a mano, is among the top 100 pizzerias in the world. In just five years, Amado has opened seven restaurants and was named Restaurateur of the Year by Esquire Philippines. He says his mother was his biggest inspiration and that he follows her values in his own work. Margarita taught Amado about using fresh ingredients and the importance of Italian cuisine. They traveled to Italy together, which helped Amado develop his skills and love for cooking from scratch. His restaurant, a mano, means “made by hand” in Italian, showing his dedication to quality food. Even before achieving success, Margarita would listen to Amado’s ideas and work with him to improve them. Their teamwork helped both of their restaurants become well-known. In fact, Amado encouraged his mother’s team to aim for international recognition, and her restaurant, Cibo, was ranked 44th in the 50 Best Artisan Pizza Chains in the World. Margarita Forés was more than just a chef. She was named Asia’s Best Female Chef in 2016 and worked to promote Filipino food worldwide. She supported local farmers and used indigenous ingredients in her dishes. She also introduced a gluten-free grain called Job’s tears, which can grow in places where rice does not. Amado continues her legacy by creating new dishes, opening more restaurants, and mentoring young chefs. Since 2019, his restaurant group has transformed the dining scene in Metro Manila. His restaurant, a mano, was recently ranked 12th in Asia-Pacific’s Best Pizzerias and 96th in the World’s Best Pizzerias. Amado says he is honored to continue his mother’s work and wants to inspire others to follow their dreams. Margarita Forés may be gone, but her legacy lives on through her son and the people she inspired. Her influence will continue to shape the food industry for many years to come.
