Sausage and Rapini

Serves 4
Ingredients
4 tbsp extra virgin olive oil
3-4 sweet Italian sausages, sweet
3-4 garlic cloves, thinly sliced
1 bunch rapini, trimmed and chopped (optional)
Chili flakes, to taste
Salt, to taste
Method
1. In a large frying pan over medium heat, heat 2 tbsp extra virgin olive oil. Add sausages and cook, about 6-8 minutes. Set aside.
2. In the same pan add remaining extra virgin olive oil and garlic. Cook until garlic is tender. Add rapini and a small splash of water, cover and steam for 2-3 minutes. Remove lid and add chili flakes, salt and sausage back to the pan. Mix until sausage is warmed through. You can leave sausage whole or cut them up. Enjoy!
