In this video, I walk you through how I like most my espressos, for both dark and ultra light roasts. I use the Decent Espresso Machine to showcase, as the inspiration for one of the recipes was made by LongPVO in the Decent Discord, but I showcase at the end how you can replicate that on other machines, with the example shown being a Delonghi Stilosa.
I hope you learn some good stuff!

  1. Mi Amigo, gracias!!! I just tried something similar with my very cheap Empstorm EM-04E, with 18g dose, of a medium light roasted coffee from Mixteca Alta, Guerrero (Mexico pacific coast). Made 2 extractions, first with "fine" grind, aiming to 45g in 35 seconds, second try was a little coarser targeting to 50g in about 40-43 seconds. Still was too acidic to my taste, so replicated the second run, but slowing even more the flow rate by opening the vapor valve 3 times, slow opening/closing, until I got a total of 55g of extracted coffee in just about 45 seconds. Man, this was delicious; still solid citric acidity as expected from this coffee but was not overwhelming, and now I was able to taste the sweet chocolate and dry fruits supposed to be in the grounds. As many others have already said: this opens a new experimental phase for many of us, coffee lovers, on the cheap, to better extract our coffees by being adventurous in using the tools we have. I very much like the nerdy yet pragmatic approach you take on coffee, keep it up man. Thanks

  4. Hey Lance, thanks for all the great content. I am a bit confused about pressure with high extraction baskets or bottom paper filters however. Given they provide a more efficient extraction and allow you to grind coarser with a faster flow rate, does this mean that the shots wouldn't actually reach 9 bar when trying to emulate the lever profile without going finer again? Or does it not matter that you don't reach 9 bar for this profile given that the extraction is more efficient?

  5. Would this be doable on a HiBrew H10A? The steam wand can lower pressure as you demonstrated in your video on it. It might be hard to get the temperature down due to the thermablock. But it has a low temp mode – would that do the trick?

One thing Ive always wondered when running a cheaper machine (I have a sage Bambino) is when weighing the output, do I stop the pump ahead of my desired weight, knowing it will drip until I get to the weight Im aiming for? Or run it up until the weight and then just pull the cup away while it drips in to the drip tray?

  7. I just tried to do something similar to the light roast recipe. Coffee was a Friedhats Gatuya AA. Brewed on a Brewtus set at 85°C with flow control set wide open at about 6ml/s. Pesado HE basket. EK43 with pre 2015 burrs. 18:52 brew ratio. I ran pump until I got 1.5 bar on pressure gauge then stopped pump for a couple seconds, then blasted through to final brew weight. The resulting cup is really quite tasty, with no harsh acidity, good sweetness though some roasty aftertaste. EY is 18.5%. Pleasantly surprised by the cup quality and feel with some tweeking; tastier cups aren't too far away.

  8. Thank you for this video! I really appreciate showing how to get different styles of shots on the Stilosa and similar machines. After you're recent Stilosa video, I just bought my own for $75 and am excited to dive in. I had been waiting to save up for a $1200+ machine which will honestly be years before I can get it, and I sold my Neo Flex just because the workflow sucked so much. But you showing how to get different results from a <$100 pump-driven machine has really opened up possibilities before I can actually afford an expensive machine.

  9. I’m so relieved and happy hear someone saying that the rules all good & well but…I’ve been pulling espresso with my LP for going on 15 years now. I have always pretty much winged it. Whilst I am not claiming to make the best espressos, I have almost always enjoyed drinking the coffee I produced, doing it for myself predominantly. Guilty of stagnating, I recently tuned into the ideas of online coffee masters & all comers. I’ve been stunned by how far off the recipe rules I’ve always managed to be…! It took literally hours of content before I first heard the word ‘ Fellini”…🤣And yet, I have developed my recipe from years with this machine, roasts and grinding limitations..Never weighed my does, output..nothing Thanks again. I love the rules…but; screw the rules..phew !

  12. any tips on how to achieve the low contact shot on an HX E61? Longer cooling flush, coarse grind and short bloom phase?
