  1. Thank you! Interesting. As far as cheese for other styles, what sort of blends do you recommend? I tried a gorgonzola after a recommendation and I liked the texture but maybe I'm not used to it. I guess it's one of the "4 cheeses" in that version? Is there any room for the varied toppings in Italy? I knew someone from there that preferred American style 🙂

  3. It might be fun to make 1 pizza from every major place like you said and then have friends come over and choose for their favorite. And it'll show regular people's opinion who haven't been to Italy

  4. Idea: how about taking 1 or 2 subscribers on a trip to Italy and showing their reactions to food and everything. Maybe an Italian American might be fun to show true Italy

  8. Love to see you make a Grandma pizza, square pizza with red sauce and mozzarella cheese Popular in New Jersey and New York. Supposed to be the type of pizza that a grandma would make for dinner on a Sunday night for a quick meal.

  9. My city in Massachusetts makes a Portuguese/Italian hybrid of this in bakeries and sub shops but I’m not a fan. The sauce is too sweet and the crust is too soft. Aside from that (or maybe because of that) I’d rather have cheese only without sauce if my only other option is this hybrid version. Crust alone yours looks much better. As long as you know two days in advance that you’ll be craving it lol.

  11. It's not true that they roll Roman pizza with the rolling pin, not everybody does it. Anyway… ROMAN PIZZA FOREVER! At least for me 🙂

  12. Thin Crust New York style Pizza please. The one and only great Pizza places in Reno, Nevada closed awhile back.. Their Crust, Sauce and Cheese was so good. Foldable and dripping with olive oil. I would like to see you do a segment on making that. I remember seeing large 25 – 50 pound bags of "High Gluten" flour stacked there.

  14. The “Red Pizza 🍕 “ apparently is also a thing in New Haven Ct. They do the crust differently, more like Neapolitan, but it’s just tomato, no cheese 🧀 (maybe some Parmesan)

  15. Roman pizza is 100x better than neapolitan. In fact, neapolitan pizza one of the worst forms of pizza.

  17. I lived in Pozzuoli north of Napoli when I was a kid in the 70's. Our nanny, Elena, made us fried pizzas. We called them Elena pizzas. The crust was pizza dough fried in olive oil . each crust was about 5 to 6" in diameter. After you fried them you top them with a sauce like these roman pizzas and bake them in the oven. You can top with cheese but I like them just with sauce. Have you had fried pizzas?

  18. I love listening to Eva talk. Reminds me of my childhood when my grandma talked to me. Same accent. I bought the cookbook and loved the beef and potato stew. That was awesome. Will be cooking all the recipes in the book.

  19. I'm lactose intolerant and vegan cheese is pretty awful. Pizza without cheese is suprisingly good. Here in Glasgow there is a large Italian community. If you tell a Roman you are Scottish he or she will provide you with a long list of relatives who live there.
