    The problem is, that it is very difficult to find fresh scallops in the shell. All the markets are selling scallops soaking in that disgusting white chemical liquid (sodium tripolyphosphate). This chemical is used to add water weight to the scallops, making them appear larger and plumper. We should all complain and demand fresh scallops! This liquid reduces flavor and also makes it very difficult, if not impossible to brown scallops.

    I love mushrooms too. This looks like a dish I'd make. The only problem I have, is I can't find the variety of mushrooms that you and other chefs I see find in their supermarkets. The best I can find are baby bellas and white button. Thanks for your glorious dishes.
