Pastificio Gentile (est. 1876) is one of the historic, artisanal pasta factories that secured the city of Gragnano’s superior pasta reputation. Gentile only uses 100% Italian high-protein wheat varietals, the pasta is formed with bronze cut molds that impart a porous texture, and it is slow-dried in the cirillo method to preserve texture and aroma. Gentile remains a small, family-owned company in Gragnano, and makes as much pasta in one year as what industrial factories might make in one day. Rogers Collection imports 26+ of their pasta cuts.
