Hi in Sicily, they eat some stuff , my grandad was a butcher he would never eat any offal , do I'm staying with that, although when I come to Florence I will try it

Dude , I try it 21 years ago and certainly one of the best finds in Europe! Amazing.
We do the same in Iran 🇮🇷
In Poland we eat tripe but in a form of a soup. So basically you make a beef broth and put slow cooked tripe in it along with some veg like carrot and parsley. You usually eat it very hot with bread as a side.
