Smoked Ricotta Meatball Sliders on the Weber Searwood with our ambassador Dining With Skyler. The cherry wood pellets used to heat the grill add SO much flavor to whatever you’re making. ✨🤌
Recipe serves 16 small square sliders or 8 long sliders
For the Meatballs:
* 2 lbs ground beef (80/20)
* 1 cup grated Parmesan cheese
* 1/3 cup dried Italian seasoning (no salt added— you can also just add dried oregano)
* 2 eggs
* 1 1/2 kosher salt
* 1 cup breadcrumbs
For the Sliders:
* 1 ciabatta loaf, sliced lengthwise
* Olive oil for drizzling
* Arabbiata sauce
* Grated Parmesan cheese for topping
* Fresh oregano leaves
* Extra virgin olive oil for drizzling
* Black pepper for topping
Preheat your Weber searwood grill to 200°F with cherry pellets. Smoke the ricotta in a cast iron skillet on the grill for 20 minutes. Remove and
set aside.
While smoking, mix ground beef, Parmesan, Italian seasoning, eggs, salt, pepper, and breadcrumbs. Form into 2-3 inch meatballs.
Increase the grill to 450°F. Drizzle ciabatta slices with olive oil and toast on the grill until golden, 2-3 minutes per side. Remove and set aside.
Grill the meatballs until cooked through and charred, about 10-12 minutes.
Spread arrabbiata sauce on the toasted ciabatta. Add smoked ricotta and meatballs. Top with Parmesan, fresh oregano, and a drizzle of olive oil.
Cut into square sliders and serve immediately. Enjoy!
