Enjoy a delicious ratatouille in just 10 MINUTES with our Stovetop Wowatouille! This recipe utilizes canned and frozen ingredients, making it completely no-chop. You will love how fast this one comes together as well as how great you will feel after a big bowl! Add this to your weekly meal rotation and you will always have a meal ready to go.

Stovetop Wowatouille
Ingredients:
1 10-12 oz. bag frozen brown rice
1 10-12 oz. bag frozen peppers and onions
1 10-12 oz. bag frozen artichoke hearts
2 15 oz. cans diced tomatoes
1 15 oz. can any beans (optional)
2 tablespoons WYW Nooch
1 tablespoon WYW Italian seasoning
2-3 teaspoons minced garlic
1 teaspoon dried basil
1 teaspoon crushed red pepper
1 teaspoon WYW Date Powder
½ teaspoon dried ground thyme
2 10-12 oz. bags frozen “zoodles” (zucchini noodles)

lemon juice, to serve

Method
Add everything except the zoodles to a medium dutch oven over high heat. Bring to a boil while stirring occasionally, reduce the heat, and simmer for a minute.

Then add the zoodles since these are more fragile than the other ingredients. Stir to bring it all together, simmer to cook through for a minute or two, and enjoy!

  1. Looks delicious. I think the main veggie in Ratatouille is eggplant. I'm not a big fan of eggplant, so this works for me. I would also add mushrooms.

  6. I’m just throwing this out there. I know it’s not possible but what would Vegan Health Insurance look like for the US. Less illness should mean premium are substantially cheaper and have access to vegan doctors or centres. Quarterly blood tests to make sure people are well but also to show they are vegan. Again I doubt this is possible but I’d be so interested to see if any research has been done on this.

  8. I would add a caveat that people with type 2 diabetes need to be cautious about adding too much simple carb starches, as it can spike glycemic load. I am reversing my prediabetes through eating more vegan protein and plenty of vegetable fibre to keep myself full without spiking my blood sugar levels. Every time I reintroduce potatoes and rice into my diet, my glycemic index soars and exacerbates my autoimmune chronic pain.

I'm thinking like it's you in my head😅 these sweet potatoes are for roasting, doesn't matter just throw them in there it will be good I promise, no date powder pure maple syrup will do just fine, white beans, I like black better and it will look prettier, doesn't matter, it will taste good I promise…😂
