  12. Fun fact. Tria is an old Arabic name for pasta which may help explain its ancient origins. I'm lucky enough to take Italian language tours to Lecce. Cooking classes are always part of the program and we always make ciceri e tria. Delicious.

  14. Love to make pasta! Made some today but gluten free. But this one looks really good! Might try this shape next time. This time cut them like Eva by knife but linguine thickness. I love chickpeas and oli oli so will definitely make this sauce. Don't know if my pasta will fry but will try it anyway. Thank you both for the recipe and the history! Have a great week!

  15. I love your videos and recipes, you guys are great. But … Harper, please teach Eva another adjective besides AMAZING. Some examples would be astonishing, marvelous, awesome, incredible, astounding, fabulous, etc. I was trying to count how many times AMAZING was said in this video, but I ran out of fingers and toes. Same with some of your other videos. PLEASE … that word is so drastically overused by Americans, let's not have the Italians doing it too. I hope you accept this criticism in the helpful and friendly spirit in which it is offered.

  19. – Oil floats on water. Thus the ciceri will only catch up flavors from the oil and garlic when the pasta with its starch is added.
    – Your pasta could have being speed dried in an low heat oven. No with an inefficient hair dryer. A hair dryer πŸ™ˆ
