Recipe:
Ingredients:
    âĒ    16 oz penne pasta
    âĒ    3 Tbsp butter
    âĒ    4 cloves garlic, minced
    âĒ    3 Tbsp flour
    âĒ    1 3/4 cups milk
    âĒ    1/2 cup reserved pasta water
    âĒ    1 cup heavy cream
    âĒ    2 oz cream cheese
    âĒ    1 Tbsp Italian seasoning
    âĒ    Fresh thyme (optional)
    âĒ    Fresh basil (save a pinch for garnish)
    âĒ    1/2 tsp salt
    âĒ    1.5 cups shredded mozzarella
    âĒ    2 cups freshly shredded Parmesan
Instructions:
1ïļâĢ Cook the Pasta:
    âĒ    Cook the pasta according to the manufacturerâs instructions. Reserve at least 1 cup of pasta water, then drain.
2ïļâĢ Make the Alfredo Sauce:
    âĒ    In a large skillet or pot, melt butter over medium heat. Add garlic and sautÃĐ until fragrant.
    âĒ    Stir in flour to create a roux. Gradually whisk in 3/4 cup milk, then add the remaining milk and heavy cream.
    âĒ    Mix in Italian seasoning, fresh thyme, fresh basil, and 1/2 tsp salt. Bring the mixture to a simmer.
    âĒ    Reduce heat and stir in cream cheese until fully melted. Slowly add Parmesan cheese (about 2â4 handfuls) and mix well after each addition. Add 1 handful of mozzarella for extra creaminess.
3ïļâĢ Combine & Bake:
    âĒ    Preheat oven to 375°F (190°C).
    âĒ    Butter a 9×13-inch casserole dish. Mix the cooked pasta with the Alfredo sauce, ensuring everything is well-coated.
    âĒ    (Optional) Mix in or top with blackened chicken, rotisserie chicken, or seafood.
    âĒ    Sprinkle a thin layer of mozzarella and Parmesan on top.
4ïļâĢ Bake:
    âĒ    Bake for 20â25 minutes. For a golden finish, broil for the last 2 minutes.

Oh my goodness, that looks so good. Chicken Alfredo, such a good dish, one of my favs. I love the white sauce so much just because of the parmesan and mozzarella. That chicken looked and sounded so stinkin' good. As always, another great meal, I absolutely love watching your videos. It's so great to see how you've grown and matured over the years, especially with your cooking. That cheese truck is totally true. I want to use store-bought shredded cheese and I couldnât get it to go into the sauce that was so frustrating.!!
